    Mashed potatoes are hands down one of the greatest parts of Thanksgiving. However, this recipe pulls some next level Harry Potter magic and turns cauliflower into the exact same deliciousness that I scoop thirds and fourths of every November. My Mom has been making these for my vegetable-hating Step-Dad for months now and he still hasn't figured it out.

    Oh, did I mention it only has 83 calories per serving? YEAH.

    Alright, I made these amazing little suckers last week, but I dressed them up. After coating them in olive oil, I sprinkled over this seasoning before baking. Once they were done, I drizzled a balsamic vinegar reduction over top and some Parmesan cheese (because everything is better with cheese).

    Here's a recipe to help you with roasting the tomatoes. You can add whatever seasoning you'd like and you can put these puppies on everything from salad to bread to in your mouth.

    These little things are addicting. I know they are ORA (Officially Roommate Approved) because shortly after making them, 15 cans of chickpeas mysteriously appeared in our kitchen. I seasoned them with lemon juice, thyme, rosemary, lemon pepper, and a little fresh ground pepper. I'm big on flavor, but you can season with whatever you want. Chickpeas are the main ingredient in hummus so if you need flavor inspiration, think of your favorite hummus flavors and roll from there.

    These babies take a little more time in the oven, but that's just more time you can do other things like tackle that mountain of homework or catch up on your shows. Trust me, these are worth the wait.

    I know what you're thinking and YES, I DID JUST SAY FRIES. I love fries. Who doesn't love fries? They're too delicious. Alright, well these aren't your normal potato status fries, but they are still really delicious. I like the lemon pepper seasoning and just added a little fresh ground pepper and garlic.... Okay, fine I also drizzled a little lemon juice over it, but seriously, just a little.. Don't overpower your dish.

    Need to elevate the crunch? Add more breadcrumbs! It's really easy people. You can do this.

    Confession time: I'm absolutely in love with broccoli. It's hands down my favorite vegetable and I don't even care if you tell all the other vegetables that I'm having a love affair with broccoli, because it's true. This recipe takes it that much further and adds cheese (my other true love, #swoon).

    Anyway, keep your breadcrumbs out and add that gorgeous cheese. This recipe calls for nutmeg but I don't think you really need it. I seasoned over everything with oregano, garlic powder, and the scallions. YUM.

    Guys, popcorn. It needs to be your best friend. I buy some low-fat, unflavored popcorn and just cover it in any ingredients I want- it's the best kind of DIY. Food Network has this ballin' list of 50 Flavored Popcorn Recipes and I'm working my way through a handful of them now. Not all of the list is super healthy so choose wisely. Some of my favorites include: Ranch, Garlic-Herb, Three-Cheese, Crunchy Ramen, and Salt and Vinegar (and I add Pepper).

    It's no question, avocado is awesome. This recipe lets you add egg, salsa/hot sauce/siracha, and cheese. It is so freaking good. You can also play a little "which came first" game by doing shredded chicken instead of the egg. It can be dinner, breakfast, or, even better, breakfast for dinner!

    TIP: Make sure you scoop enough of the avocado out so that the egg doesn't spill everywhere.

    This one has a few more steps, but it's also really fun. Here's a way to make things even easier: cover the onions in olive oil or spray with PAM and then coat in breadcrumbs. That way, you cut out all those calories from the buttermilk and flour. Voila! Insta-better! YUM. Basically this is one step away from that delicious bag of Sour Cream and Onion Chips you're really craving.
